Ah yes! I definitely remember being more excited about the time I spent on an airplane rather than the destination itself when traveling. I definitely had butterflies from the second I got in a car to get to the airport, to checking in, going through security, waiting at the gate, boarding, and landing!
The idea about becoming a pilot in 10 weeks does seem impossible, but let's just see how much we can cover during this time!

Got my apron tied around my waist, baking hat on my head, I'm ready to start killing these crossiants.
First things first, making the dough.

5. Slice the cold butter in thirds and place onto parchment paper
6. Place another piece of parchemnt paper on top of butter, and beat it with a rolling pin
7. Roll butter into a 7x7 inch by 1 cm thick square
8. Put butter into refrigerator
9. Roll out the dough, to form 4 quadrants
10. Roll out each quadrant to form a 10x10 inch square
11. Place butter on top of dough, and fold the sides of the dough over the butter to cover it
12. Make sure sides are sealed in
13. Refrigerate for 1 hour
14. Take out from fridge, and roll back to 8x24 inches, then fold again.
15. Refrigerate for 1 hour.
16. Repeat 14 - 15 for 3-4 times.
17. Cover in plastic wrap, and wait until tomorrow
18. Cut dough into 4 pieces, and place chocolate on the edge of the dough and roll tightly to close it.
19. Brush with egg wash
20. Let crossiants sit in a warm place to rise for 1-2 hours
21. Preheat over to 400 F
22. Rebrush with egg wash, and bake for ~15 minutes.
Oh my, I didn't know this was going to take a whole day...

Making the shells:
1. Line a cookie sheet with parchment paper.

2. Cut open each of the tea sachets and pour the contents into the food processor. Pulse the food processor a few times to break up any of the bigger leaves.
Uh oh . . . I don't have a food processor, but a blender should do!
3. Add the powdered sugar and almond flour and pulse until fully combined and rid of lumps. Sift the combined dry ingredients into a large bowl. If you do not have a food processor you can just sift the ingredients together.
I guess using my blender for this step wouldn't be too ideal...
4. In a medium bowl, prepare the french meringue. Beat the egg whites on low speed with a hand mixer until they get frothy. Increase the speed and slowly add the sugar. Beat until stiff peaks form. If you want to add any food coloring, do it now, but use it sparingly or you will make the meringue too liquidy.
Stiff peaks, stiff peaks, stiff peaks! Okay, I know I have to beat the egg whites until I can flip the bowl over my head. Thats just what every good baker does!
5. Add the french meringue into the dry ingredients and begin to gently fold. The batter should be fully combined and not streaky. When you are able to make a figure 8 with the batter in one motion, the batter is ready (more information on this process in my French Macaron Recipe). If it is too runny it has been over-mixed.
Now, now. Be gentle here. I defintely can not over mix this, if I do, its going to turn into . . .

Whew! Onto the easy parts now. I just have to be patient.
9. Preheat the oven to 280 degrees (F).
10. Place the macarons on the middle rack of the oven and bake for 5 minutes, rotate the cookie sheet and bake for another 5 minutes, rotate the pan one last time and bake for 5 minutes. [[15 minutes in total.->15 minutes later]]

1. In the bowl of a stand mixer or in a medium bowl with a hand mixer, beat the butter until very soft and fluffy.
There we go again with fancy kitchen equipment. . . I can just use a hand whisk and bowl.
2. Add the honey and half of the powdered sugar. Beat until fully combined.
Whooo! Arm workout!
3. Add the rest of the powdered sugar and the heavy cream and beat for 5-6 minutes or until the buttercream is light and fluffy.
I think, if I decide to continue making macarons, I will definitely have toned arms, but a bigger waistline. .
4. Transfer the buttercream to a piping bag and pipe the desired amount of buttercream onto the inside of a macaron shell. Sandwich another macaron shell on top.
Hm, instructions didn't tell me to find matching macaron shells. This recipe is missing some [[instructions->Bite]]!

Although I wasn't able to fully commit to my 10 week goal of becoming a pilot, I definitely have a better understanding of what it takes to work towards one!
If I were to want to become a pilot in the future, at least I know that I will need to have enough savings first!

I think after all these attempts and failing, I have a good idea of what it takes to be successful at something.
Although I wasn't able to master any of these recipes, I've learned that just because I can't get something right the first time, as long as I stay commited, I will definitely be capable in the future!
